Basil Pesto Sauce

6 Cups Fresh basil leaves only
4 cloves Garlic (1 tbsp. minced)
½ Cup Pine nuts, toasted
1½ Cup Extra virgin olive oil
1½ Tbsp. Grated Parmesan cheese
⅛ Tsp Citric Acid
Salt and pepper to taste

Basil, must first be rinsed well and dried. Be sure to remove all moisture to avoid oxidation and loss of the vibrant green color.

1) In a food processor, puree the basil, and garlic while slowly adding 2 tablespoons of olive oil.
2) When the mixture is ground together, add remaining ingredients.
3) Add the Parmesan cheese last.
4) Process just until the cheese is blended in. 

Makes about 2 cups.
